Molten Lava Cakes

This week I made Molten Lava Cakes
The cakes were very yummy but very hard to get just right, but when done right it's like chocolate heaven!
but changed it a bit
Ingredients


  • 1 cup unsalted butter or unsalted margarine (if you use non-salted butter add a pinch of salt)


  • 1/2 cup good quality cocoa powder


  • 4 Tablespoons + 4 teaspoons olive (or veggie oil)


  • 1/2 cup + 4 teaspoons of sugar


  • 5 large eggs


  • 1/2 cup sugar


  • 4 teaspoons flour (or matzo meal, ground in a blender to a fine powder)



  • Garnish:

  • 1 (6 ounce) container raspberries, cooked on med in sauce pan with


  • 1/2 cup sugar




  • Directions

    Heat first four ingredients in a glass bowl in the microwave, stirring every 30 seconds until completely melted. Place in refrigerator to cool
    Beat eggs and remaining sugar until sugar is dissolved.
    Slowly add cooled chocolate mixture to eggs and add flour until just combined.
    Spray ramekin with PAM and fill 3/4 full. Let set for at least an hour, I put mine in the refrigerator for a couple hours and then pulled out an hour before I needed to cook it. Don't skip this step or it will be to fluffy and wont lava. I also put mine on a cookie sheet for easy moving.

    Place oven rack in middle position and heat oven to 450 degrees. Bake cakes until batter is puffy but the center isn't set. I cooked mine for 10-11min. My cakes looked all the way puffy but a toothpick came out runny when inserted in the center.
    Using pot holders pick up your cake and hold it in your hand. Using a knife carefully run it along the side of the cake all the way to the bottom, I even have to somewhat pry it under the cake as well to get it to release. Take your plate and hold it over the top of the ramekin and flip them over together hanging onto the ramekin, lift off and the cake should come out.

    Now this is where it is hard, you may over cook your cakes and the inside is just soft it just tasted like a yummy cake with no lava, or you may be somewhat under cooked like the above picture where when it falls out it falls apart and lavas right away, still tastes amazing!

    Or if you're lucky it will fall out like this

    And you can decorate it like this with raspberries cooked down with sugar

    And when you cut into it, sweet heavenly chocolate oozes out! Yum.
    It took me multiple tries to get this one beauty, all the tries tasted yummy just weren't the chocolaty goodness I was after. The recipe makes 8 so I cut it in half even though I was making it for only 3 people, that way when some didn't turn out I had more I could make. Also don't let them sit after being cooked, they continue to cook and will over cook the center.

    So if you feel adventurous give it a try!
